Strawberry Rejoicing
When I was a kid, I was allergic to strawberries so I've spent almost my whole life passing on this sweet treat (are they sweet?? I don't even know!). I went to the allergist yesterday and found out that I am no longer allergic!
My husband and his family LOVE strawberries but I have never cooked with them! What are your favorite strawberry recipes? A whole new world has opened up for me! I would love for you to share your favorite strawberry creations so I can dazzle my husband - he just made strawberry sorbet over the weekend and I need to top that! :)
Strawberry wine! I just cut up about a half pint of strawberries and then let them sit in cheap, semi-sweet white wine overnight with rosemary and lemon balm (not totally necessary, but I like what they add). Then drain it the next day.
ReplyDeleteAlso, strawberry popsicles. Cook down a cup of strawberries with plenty of sugar, then puree them with a little lemon juice. Let cool, then mix in a cup of greek yogurt and pour into popsicle molds.
And a simple jar of jam is super easy. Just cook 'em down with sugar and a tablespoon of water.
These aren't fancy, but super quick and easy. Especially if you have strawberries that are starting to go bad that need to be used ASAP.

This is an amazing Strawberry pie. (like Big Boy but even better)
ReplyDeleteBoil gently one cup of sugar and one cup of water. (stir til boiling)
Mix together 3 tablespoons of Cornstarch and 1/2 cup of cold water - Add this to the boiling mixture, stirring until thick and nearly clear.
Remove from heat and add one small package of strawberry jello. COOL REAL GOOD. (I usually have enough time to cut the strawberries while this mixture cools.) Add 4 cups of sliced strawberries to the mixture. Pour into a pre-baked pie shell.
It does dazzle! Everyone asks for this recipe.
